Easter Recipes for the Slow Cooker



Happy almost-Easter! 

We host Easter each year (except for when I'm pregnant or have a newborn, which means we haven't done it for the past two years. But that's not my fault because other people have offered, and I'd just be an idiot to not accept the offers. So, I still stand by my declaration that we host Easter every year...) and I love it.

Adam usually puts something on the barbecue, our family helps out by bringing side dishes or beverages, and I line up a bunch of crockpots on the countertop. 

There are too many of us to all sit around the table, so we kind of eat in shifts. The kids run around in circles because it's fun for the uncles to "chocolate them up" and the Easter egg hunt out back results in squished flowers, mud tracked indoors, and eventually tears when the egg-grabbing turns a bit too competitive. 

It's certainly not a scene Norman Rockwell would have chosen to paint--- but he should have.

Because honestly? The day couldn't possibly be any better.

and I can't wait.

New Look, New Site, New Book, but it's still all the same. I promise.

Welcome to the great-big-huge-honking site redesign! It's new. It's different. But all of your favorite (and even your not-so-favorite) recipes are all here, and all of your bookmarks will continue to work forever and ever.

I've wanted to tie my different writing endeavors together for quite a while now, and Jennette Fulda, of Make My Blog Pretty figured it out.

Because she is wonderful.


I'm still playing around with the features and learning the ins and outs of the software (I'm a slow learner) but I couldn't be happier. 

I hope you enjoy the new design and the new features in the header. There's also a brand new home page that's pretty cool (it moves! and has random generator thingies!) You'll find links to pretty much anything I could think of that you might want/need, and there's a shiny new downloadable page with free stuff on it.

I began writing this book when my oldest child was a baby---over nine years ago. I was running a drop-in childcare center at the local courthouse and my little one came to work with me every day. I was listening to time management seminars on tape while I worked, and kept thinking that there should be a day timer for moms. Not a blank one--- those already existed--- I wanted someone to TELL me what to do.  

 I wanted someone (or thing) to tell me to change the sheets, to disinfect the remote controls, to wipe down the blinds, and to call my mom. I wanted to be reminded to do a breast self-exam and to make dental appointments for me and the family. I wanted someone to walk me through the Winter Holiday months (in a non-preachy or judgmental way).

I wanted encouragement.  And someone to tell me I was doing a good job, even when I was sleep-deprived and had spit-up in my hair.

So I emailed the Franklin Covey company and told them that they should make a planner for moms. I corresponded back and forth with their development department a few times before I was kind of blown off (they sent me a 15% off coupon and a form letter). 

I then did what any good red-blooded American would do. I got mad and made one of my very own.

 This book has had a rather long and difficult pregnancy. It took me 2 years for me to find and secure a literary agent, then another 3 years for her to find a publisher (I've got an awfully nice collection of reject letters).

And then that publisher backed out (due to the economy) after it was ready to go to print.
(years 6 and 7)

and it took another year for me to find a new publisher.
(year 8)

meanwhile, the crockpot thing was taking on a life of it's own, for which I am eternally grateful, because if it wasn't for the crockpot thing, this book wouldn't have come to life.

but it's here. And it's because of you.

As a new mom I found myself wishing for some sort of guide that laid everything out. Some sort of system that reminded me to make dental appointments for everyone in the family every six months. A planner to help with the daily, weekly, and monthly chores so nothing was forgotten. A little bird to whisper in my ear that it's time to update the baby book and family scrapbook. A pat on the back and a friendly nudge to take a long bath and take the time to shave my legs properly.

I came up with Totally Together: Shortcuts to an Organized Life as a way to help me as I waded through the vast number of "shoulds" and "shouldn'ts" that I came across in parenting, housekeeping, and self-help books and magazines. Totally Together gave me the permission and tools I needed to whip through the daily chores and minutiae and move on to what I really wanted to do: spend time with my family and enjoy living life. My hope is that your Totally Together journal will be of help to you and your family, too.

Sundried Tomato and Artichoke Slow Cooker Dip

Oh my. This will be made again.

I used the Savory Garlic Cooking Creme for this recipe--- and it truly couldn’t have been any easier. The Cooking Creme is perfectly seasoned; no need to add anything but the artichokes and sundried tomatoes.

The Ingredients.
serves 6 (maybe more, but I accidentally ate too much)




1 (10-ounce) container of Savory Garlic PHILADELPHIA Cooking Creme
1 (14-ounce) can artichoke hearts, drained and chopped
1/4 cup sundried tomatoes, soaked, then drained and chopped
chips for dipping

The Directions.

Use a 2-quart slow cooker. Scoop out the Cooking Creme and put it into an empty slow cooker. Lick the spoon.
Add the chopped artichokes and sundried tomatoes. Stir (but not with the spoon you licked, because that would be gross). Cover and cook on low for 3 hours, or until fully hot.
Serve with your favorite chips.

The Verdict.

DEEEE LISH OUS.

and super garlicy. Keep gum in your back pocket.

I ended up making this back when school was still in session (EONS AGO!) and had a house full of kids after school. I had kids ranging from 13 down to the baby (16 months at the time) for snack, and the dip was finished before the homework was complete. 

It was easy to prepare, and a great "something new" to bring along to a backyard barbecue or potluck.

Slow Cooker Loose Meat Sandwiches Recipe



I am such a dork that I didn't realize that yesterday was the Super Bowl until Saturday afternoon. I knew it was coming, but in my head I thought there were still a few weeks to go. Because of this, I didn't plan any Super Bowl food---
in fact, on Friday when I woke up feeling kind of sluggish and I'm-coming-down-with-a-cold like, I decided that I was going to eat raw for the next three days. And when I watched my DVR'd Oprah, and it was on "going vegan" for a week, it seemed like A SIGN that I should really do it. 

So I plopped the baby in the stroller and we walked to the local produce market and bought pretty much everything in sight (at least we must have, according to my receipt. DUDE. eating that way costs bank.) Anyway. I came home and made a delightful smoothie of pear, mango, clementine oranges, apple, banana, and kale (and then a bit of water to get it to smoothie-cize). It was actually pretty good.

and I was all geared up to eat/drink nothing but this concoction for the next three days.

You see where I'm going with all this.... right?

yeah. I lasted until about 1/4 through the game and then succumbed to Adam's "Super Nachos" (essentially a few chips loaded with 8 million pounds of cheese, guacamole, and sour cream).

oh well.

I don't really have a segue from that story to this recipe. The first time I heard of Loose Meat Sandwiches was on the Roseanne television show back in the 90s. I forgot all about them until our family friend, Harvey, asked if I had ever made them in the crockpot. When I said I hadn't he told me that they'd work great.

Harvey was right!

The Ingredients.
serves 8
1 pound extra lean ground beef or turkey (the lean is more imp. than the type)
1 onion, finely diced
1 teaspoon kosher salt
1 tablespoon garlic powder
1 tablespoon sugar
1 tablespoon prepared mustard
1 tablespoon apple cider vinegar
2 cups beef broth
8 hamburger buns (I used gluten free bread, toasted)
traditional hamburger fixen's (pickles, tomatoes, lettuce, mustard, etc)

The Directions.

Use a 6-quart slow cooker. Crumble in the ground meat (it needs to be thawed, or it'll cook in a big clump). Add onion, sugar, spices, mustard, and vinegar. Pour in the beef broth. Mix well until everything is fully incorporated---you may want to use your hands. Cook on low for 8 to 10 hours. Stir well before serving by scooping with a slotted spoons onto hamburger buns. Top with your desired fixings.

The Verdict.

The meat is juicy and tender with a slight tang from the pickle and mustard. It doesn't taste salty as much as savory---which I was worried about. I've had hamburger-with-gravy sandwiches before and didn't really care for them, but this is not that. The kids loved their dinner, and Adam ate 1 1/2 sandwiches. I served the leftover meat over mashed potatoes with frozen peas the next night.

Quick and Easy Caramel Apple Cider CrockPot Recipe



A friend of mine treats her kids a few times a week to a caramel hot cider at Starbucks, and my kids are were jealous and kept bringing this up each time we drove by the strip mall.

So I evened the score. I made a boatload.
and the kids WERE THRILLED.

save yourself $3.50, and dig through the cupboards. You can do this. It's super easy.

The Ingredients.
serves 4, (can easily be multiplied --use a larger cooker though!)
4 cups apple cider
3 tablespoons caramel syrup (the ice cream topping)
1/2 tablespoon ground cinnamon
1/4 teaspoon ground cloves
4 tablespoons sweetened whipped cream (optional; I leave it off for my kids)

The Directions.

Use a 2-quart slow cooker. Now this is sweet---I've modeled it after the stuff they serve at the store. After making it this way a few times, I've successfully cut back on the syrup without my kids (and their friends!) knowing---do what is right for your own family.

Mix it all in together---stir, and cook on low for about 4 hours. I like to put it on after I clean up the breakfast dishes and then leave it alone until our after-school snack. I've also made a large pot for Girl Scout events and  playdates. The kids really like it, and it's a nice change of pace from hot chocolate with marshmallows.

Leftovers refrigerate and reheat well (in the microwave).

The Verdict.

The only drawback to this recipe is that when we have caramel sauce in the house, it tends to get everywhere. Chris always says that she has an eighth child named "Not Me" who is the main mischief-maker in her home. "Not Me" is evidently to blame for sucking syrup right out of the bottle and leaving sticky fingerprints all over my doorknobs and couch cushions.

Pesto Minestrone Soup Slow Cooker Recipe




Although it was bizaredly warm and we spent the day outside walking around a community farm (baby pigs couldn't possibly be any cuter), we're still smack dab in the middle of soup season.

Soup rocks.

This is a hearty (non-boring) minestrone with a funky and surprising twist: pesto. It's delicious, filling, low fat, and can be completely vegetarian/vegan if you opt for vegetable broth. 

The Ingredients.
serves 6
1 large onion, diced
1 cup chopped carrots
1 cup sliced celery
1 yellow or red bell pepper, seeded and diced
1 pound (any variety) potatoes, cut in 1-inch chunks (no need to peel)
1 (14.5-ounce) can diced tomatoes
2 (15-ounce) cans beans (undrained; your choice, I used black and kidney)
1 (11-ounce) container prepared pesto (or a cup or so homemade)
4 cups chicken broth (can use vegetable)
1 cup frozen peas (to add later)
1 handful baby spinach (to add later)

The Directions.

Use a 6-quart slow cooker. Put the veggies into the bottom of your slow cooker and add the entire can of tomatoes and both cans of beans. Pour in the pesto and broth. No additional seasoning is needed. Cover, and cook on low for 8 to 10 hours, or until the vegetables have fully cooked and softened and flavors have melded completely. stir well, and add frozen peas and a handful of spinach. Cook on high for another 10-15 min or until the peas are fully hot and the spinach has wilted.

The Verdict.

I love how the pesto flavors this soup so fully---I didn't want to sprinkle on a bunch of cheese the way I sometimes do when eating soup. I first had pesto minestrone soup at an Italian restaurant on vacation--it was a starter, and I liked it better than the meal and knew I needed to make it at home.
I prefer to use spinach rather than kale in my minestrone (Adam hates kale. I can't persuade him otherwise, and have decided it's not something to fuss about) but if you'd like to use kale  (it's traditional), the directions are exactly the same.

 I have completed the very first webTV interview with Kim Demmon, of Today's Creative Blog. It took a while to figure out the software, but Kim was SO wonderfully patient, and hopefully things will continue to get easier and easier.
