Chocolate Mint Fondue Slow Cooker Recipe



It's girl scout cookie season. The number one seller is ALWAYS the Thin Mints. 

Always.

I've got two in scouts this year: a Daisy and a Junior. My girls participate in cookie sales because I believe it's a great way to boost self-esteem by speaking clearly to grown-ups and handling money.

We aren't able to eat the cookies due to our gluten intolerance. It's really not a big deal, though, because I can quickly whip up a batch of chocolate mint fondue that feeds the entire troop for less than one box of the "forbidden" thin mints.

Not a bad deal!
The Ingredients.
serves 8
12 ounces semisweet chocolate chips
1/2 cup heavy cream
1/2 teaspoon mint extract or 2 tablespoons peppermint schnapps (NOT for the girl scouts!)
marshmallows or cookies for serving (my kids adore the chocolate sandwich cookies from Glutino)

The Directions.

Use a 2-quart slow cooker. Put the chocolate chips into your slow cooker. Add the heavy whipped cream and mint extract (or the schnapps). Cover and cook on low for 2 hours, stirring every 30 minutes or so. I really like melting chocolate in the slow cooker because you really don't need to worry about it scorching. If you smell the chocolate, give it a quick stir.
Serve with your favorite cookies or marshmallows. 

The Verdict.

This seriously tastes like liquid Girl Scout cookies. It's perfect. Just a bit minty, but not over-the-top.

Apple Coffee Cake-- made in the Slow Cooker



It's the Bunnykens dish set again! (side note: I really should take a run to the dollar store and get more unmatched dishes so I can post food pictures on the Internet.)
I really like baking in the slow cooker. I get it that this perhaps sounds a bit odd---- why should I bake something in the crockpot for 2 to 3 hours, when I can easily throw a pan in the oven and have coffee cake in only 30 minutes?

I'll tell you why. I'm bonkers.

I don't mean this in the clinical sense (although I'm sure some could argue otherwise), I mean it in the I'm always doing too many things at once and sitting around waiting for 30 minutes for a cake to rise and bake properly just isn't going to happen.

because the doorbell rings.
or the phone.
because the baby needs changing. 
or because she plays with a bottle of vanilla extract while "sorting" the spice cabinet and some spills and she licks it up and then her mom reads the bottle and finds out it's 26% pure alcohol and maybe-just-maybe over-reacts and calls poison control and talks to a really nice man named Michael who assures her that she's JUST FINE and that NO ONE likes the way that vanilla extract tastes and she surely couldn't have ingested very much.

or something like that.

SO! That is why I like baking in my slow cooker. I like the wiggle room. I like it that I can whip up the batter, wash the dishes, and leave the house to run a few errands or pull some weeds in the garden. I like that I know that when I start to smell the baked goods, there's no need to panic---it's not going to burn to a charred brick. I like that I can hold a baby on one hip while I check the baking process without worrying that she's going to lean in and burn her hand to a singed nub.

The Ingredients.
serves 8
coffee cake:
cooking spray
2 cups Bisquick mix (NOTE: if not GF, you can use AP flour, but a mix will provide the fluffiest result--I used Pamela's Baking Mix. There is a new GF Bisquick, though, at most grocery stores)
2/3 cup applesauce
1/4 cup milk
2 tablespoons sugar
2 tablespoons butter, melted
2  apples, peeled, cored, diced (green is best, I had Fuji on hand)
1 tsp ground cinnamon
1 tsp vanilla extract
1 egg

crumb topping:
1/4 Bisquick (or Pamela's, etc. see above notes)
1/4 cup brown sugar
2 tablespoons butter, softened
1/4 cup chopped nuts (optional)

The Directions.

I used a 4-quart slow cooker with the batter directly in the crock (stoneware)  insert. If you only have a large 6-quart slow cooker, that's okay---put the dough into a loaf  pan and put that into the stoneware insert. No need to add water, just put the pan in the crock.

Spray your pan or 4-quart insert with cooking spray and set aside. In a mixing bowl, combine all the ingredients for your coffee cake. Stir with a rubber spatula--no need to break out the mixer. The batter will be thick and lumpy. Pour into your prepared stoneware insert (or baking pan).
In a small bowl, combine the ingredients for the crumb topping and sprinkle evenly on top of the batter. Cover and cook on high for 2 to 3 hours, or until the cake browns and pulls away from the sides. Uncover the cooker and cook on high for another 30 minutes, or until an inserted toothpick comes out clean.

The Verdict.

This is a perfect coffee cake: sweet, but not too sweet, moist and crumbly. I sometimes will make the batter the night before and then scrape it into the crock to bake while I get work done around the house before the rest of the house wakes up. I also love making this during the day as an after school snack. It freezes and reheats (in the microwave) beautifully--perfect for a busy morning.

Slow Cooker Loose Meat Sandwiches Recipe



I am such a dork that I didn't realize that yesterday was the Super Bowl until Saturday afternoon. I knew it was coming, but in my head I thought there were still a few weeks to go. Because of this, I didn't plan any Super Bowl food---
in fact, on Friday when I woke up feeling kind of sluggish and I'm-coming-down-with-a-cold like, I decided that I was going to eat raw for the next three days. And when I watched my DVR'd Oprah, and it was on "going vegan" for a week, it seemed like A SIGN that I should really do it. 

So I plopped the baby in the stroller and we walked to the local produce market and bought pretty much everything in sight (at least we must have, according to my receipt. DUDE. eating that way costs bank.) Anyway. I came home and made a delightful smoothie of pear, mango, clementine oranges, apple, banana, and kale (and then a bit of water to get it to smoothie-cize). It was actually pretty good.

and I was all geared up to eat/drink nothing but this concoction for the next three days.

You see where I'm going with all this.... right?

yeah. I lasted until about 1/4 through the game and then succumbed to Adam's "Super Nachos" (essentially a few chips loaded with 8 million pounds of cheese, guacamole, and sour cream).

oh well.

I don't really have a segue from that story to this recipe. The first time I heard of Loose Meat Sandwiches was on the Roseanne television show back in the 90s. I forgot all about them until our family friend, Harvey, asked if I had ever made them in the crockpot. When I said I hadn't he told me that they'd work great.

Harvey was right!

The Ingredients.
serves 8
1 pound extra lean ground beef or turkey (the lean is more imp. than the type)
1 onion, finely diced
1 teaspoon kosher salt
1 tablespoon garlic powder
1 tablespoon sugar
1 tablespoon prepared mustard
1 tablespoon apple cider vinegar
2 cups beef broth
8 hamburger buns (I used gluten free bread, toasted)
traditional hamburger fixen's (pickles, tomatoes, lettuce, mustard, etc)

The Directions.

Use a 6-quart slow cooker. Crumble in the ground meat (it needs to be thawed, or it'll cook in a big clump). Add onion, sugar, spices, mustard, and vinegar. Pour in the beef broth. Mix well until everything is fully incorporated---you may want to use your hands. Cook on low for 8 to 10 hours. Stir well before serving by scooping with a slotted spoons onto hamburger buns. Top with your desired fixings.

The Verdict.

The meat is juicy and tender with a slight tang from the pickle and mustard. It doesn't taste salty as much as savory---which I was worried about. I've had hamburger-with-gravy sandwiches before and didn't really care for them, but this is not that. The kids loved their dinner, and Adam ate 1 1/2 sandwiches. I served the leftover meat over mashed potatoes with frozen peas the next night.

(Easy) Peanut Butter Chicken Slow Cooker Recipe



The kids and I have been on a peanut butter kick lately. We seem to go through a jar a week---I smear it on rice cakes (we like the apple ones) and sprinkle on dried cranberries for breakfast, and mix it with honey and dip in green apples for an after-school snack. I'll even sneak a spoonful right out of the jar when no one's looking.

The baby still can't have peanut butter, so she stuck to quinoa  while the rest of us scarfed down this chicken (p.s. QUINOA MAKES A BIG MESS under the high chair).

I used chicken quarters for this recipe because I bought a bunch on sale, but if I was to purchase chicken specifically for this dish, I'd opt for boneless, skinless thighs.

The Ingredients.
serves 4



1 1/2 pounds boneless, skinless chicken, cut in chunks *
1/2 cup natural peanut butter (creamy or chunky, your choice)
1 red bell pepper, seeded and sliced
1 large onion, coarsely chopped
1 tablespoon ground cumin
1 lime, juiced
1/4 cup soy sauce (use gluten free--La Choy or Tamari wheat-free)
1/2 cup chicken broth

* If you are going to use quarters, or meat with bones, be aware that the meat will probably fall off the bone, and you'll need to fish out the bone pieces before serving. I've used this sauce with a whole chicken (I doubled the sauce ingredients for a 4.5-pound bird) and it was fantastic, but the bones were a bit of an issue.

The Directions.

Use a 4-quart slow cooker. Put the chicken into the bottom of your pot and add the peanut butter. Toss in the vegetables and cumin. Squeeze in lime, and add soy sauce and chicken broth. Stir as well as you can to combine (the peanut butter will be clumpy, and that's just fine). Cover and cook on low for 6-8 hours, or on high for about 4 hours. Serve over rice or quinoa.

The Verdict.

Adam and I both think this sauce tastes like the Thai Peanut Butter chicken we order from our local Thai restaurant. It's delicious---and the whole pot costs less than 1 serving does at the restaurant! If you're not serving children and would like a bit of a kick, you can add red pepper flakes either while cooking (start with 1/2 tsp) or at the table to taste. If you'd like, you can squeeze on some extra lime juice at the table.
 My kids love this meal, and eat much more than they usually do for dinner when I serve it.
